Ingredients
- 1/2 lb baby spinach leaves
- 2 t olive oil
- 3 garlics
- 2/3 t salt
- 1/4 t pepper
- 1 t unsalted butter
- Lemon
Directions
- Rinse spinach in cold water to make sure it's very clean. Spin dry.
- In large pot, heat the olive oil and saute the garlic over medium for about 1 min.
- Add all spinach, salt and pepper, toss with garlic and oil, cover and cook for 2 mins.
- Uncover, turn heat on high and cook for another minute, until spinach is wilted.
- Using slotted spoon, lift spinach out, top with butter, a squeeze of lemon, and a sprinkling of salt. Serve hot.
