Garlic Sauteed Spinach

Ingredients

  • 1/2 lb baby spinach leaves
  • 2 t olive oil
  • 3 garlics
  • 2/3 t salt
  • 1/4 t pepper
  • 1 t unsalted butter
  • Lemon

Directions

  1. Rinse spinach in cold water to make sure it's very clean. Spin dry.
  2. In large pot, heat the olive oil and saute the garlic over medium for about 1 min.
  3. Add all spinach, salt and pepper, toss with garlic and oil, cover and cook for 2 mins.
  4. Uncover, turn heat on high and cook for another minute, until spinach is wilted.
  5. Using slotted spoon, lift spinach out, top with butter, a squeeze of lemon, and a sprinkling of salt. Serve hot.
